Great for dinner parties and entertaining - these filets have been a big hit this past year at the Claremont Inn. They are easy to prepare and require very little last minute work – so you can enjoy the party too!

 

 Ingredients 

 Step 1 – Prep the Steaks

 Salt and pepper the steaks and let them warm up to room temperature – at least an hour before cooking.

 *Chef’s Tip* This prep and subsequent pan searing can be done a couple of hours before serving time so all you have to do is pop them in the oven.

 Step 2 – Searing the Steaks

To pan sear your room temperature steaks - heat a heavy bottom skillet over high heat adding just enough vegetable oil to coat the bottom of the pan.

Place several steaks in the pan - being careful not to overcrowd them

*Chef’s Tip* Leave plenty of space around each steak – otherwise they will not brown.

Cook until evenly browned and turn the steaks to brown the other side.

As soon as the steaks are browned, place them on a wire rack which is on a baking sheet

 *Chef’s Tip*  DO NOT place the steaks on a flat surface – they must always be on a wire rack – otherwise – they will lose much of their juices into the pan they are resting in.  Managing this detail will make you the envy of your friends, they will not know why the steaks are so good, they just know that they are.  The reason my friends, is because the steaks have retained most of their natural juices!

 *Chef’s Tip* – line your baking pan with parchment paper under the wire rack for the steaks for easy clean-up. 

The steaks are ready to go in the oven – now – or just be fore you are ready to get your dinner ready for the table.

 Step 3 – Cooking the Steaks

The steaks cook in a hot – 425 degree oven -  for about 25 minutes for perfect medium rare to medium steaks – adjust your cooking time up or down to get them just the way you like them. Additional 5 or so minutes for Medium well, and 10 minutes for well.

 *Chef’s Tip* - You can always undercook them and adjust after, never can you roll back the ‘doneness’.  Having served thousands of these steaks at the Claremont Inn to our Bed and Breakfast guests, they are just perfect at 25 minutes.  Experiment with your meat and oven.

 Step 4 - The Razzle Dazzle

For a simple but elegant finish for your filets in the last 10 minutes of cooking time place a tablespoon of crumbled Roquefort cheese on top of each steak – it will come out bubbling and browned and makes a delicious sauce for your steaks.

 And for the big finish we make Spicy Shallot Ringsthese taste treats have a way of disappearing before the steaks are out of the oven – so beware!
