Congratulations on your submission of

 

Grilled Potato Salad

 

Start with new red potatoes – blanch then cross cut .

Toss in olive oil , salt , and pepper. Grill on all sides.  

1 red onion- cut into rings toss in olive oil, salt, and pepper.

 Mix with potatoes while grilling.  

In separate bowl mix ½ c. mayo and 2-4tsp. of sour cream.

Fold into potato and onion mixture after grilling.

 Top with feta cheese (my favorite is with blue  but I’ve used gorgonzola too.)

Then last top all this yummy stuff  off with 1 # crispy fried bacon crumbled. 

It is served hot but is good cold too. I have been lazy and fried my potatoes indoors and not even used red  ones and it is still great!
